Cooking with a whole, pasture raised chicken is an amazing way to feed yourself and/or your family. Remember to always test the doneness of your meat using an accurate meat thermometer.
Recipe 1:
Apple & Sage Whole Roasted Chicken
What better flavor combination for fall cooking? We love this super easy, delicious meal.
1) Pre-heat your oven to 425 degrees
2) Chop 1 whole apple into slices, chop two whole onions, and mince a head of garlic (or whatever amount you enjoy for flavor)
3) Mix a half a cup of oil of your closing (we usually pick butter or vegetable oil), and mix in your favorite seasonings like salt, pepper, and dried parsley
4) Stuff your chicken with your chopped apple, onions, and garlic and coat all parts of the bird with your oil mixture
5) Put your bird in the oven for about an hour to an hour and a half. Test doneness using a meat thermometer.
Recipe 2:
Hearty Carrot Rice Soup with Shredded Chicken
This is an awesome recipe if you're looking to get a second or third meal out of your chicken! If you're ambitious, you could even take the rest of the meat off the bones and make your own stock to go with it.
1) Chop up onions, garlic, and carrots and sautéed them with some oil in a pot
2) Add 4 cups of broth
3) Chop and add potatoes and celery
4) Let it come to a boil and add a cup of rice, then turn the heat down to low for ~20 minutes
5) Add your chicken
6) Add fresh herbs and/or kale and enjoy!
Recipe 3:
Whole Roasted Chicken with Delicious Crispy Potatoes
Is there anything better than potatoes that are perfectly crispy from being cooked with a little bit of chicken fat? We don't think so.
1) Pre-Heat oven to 425
2) Cup up a few handfuls of small potatoes
3) Mix oil or butter with spices to pour over your chicken
4) Place on glass pan and coat chicken with your oil mixture
5) Surround chicken with potatoes
6) Cook for about an hour and enjoy!
